  1. Prepare the sauce
    In a bowl, combine soy sauce, mirin, sugar, and dashi stock (or beef broth). Stir until the sugar is completely dissolved. Set aside.
  2. Cook the onions
    Heat vegetable oil in a large skillet over medium heat. Add sliced onions and cook for about 5-7 minutes until they become soft and translucent, stirring occasionally.
  3. Add beef and ginger
    Add the thinly sliced beef and grated ginger to the skillet with the onions. Cook for about 2-3 minutes until the beef is no longer pink on the outside.
  4. Simmer with sauce
    Pour the prepared sauce over the beef and onions. Bring to a simmer, then reduce heat to low. Cover and simmer for about 10-15 minutes until the beef is tender and has absorbed the flavors of the sauce.
  5. Prepare eggs (optional)
    If using eggs, you can either poach them separately or crack them directly into the simmering beef mixture during the last 2-3 minutes of cooking, covering the pan to cook the eggs to your desired doneness.
  6. Serve the beef bowl
    Divide the hot cooked rice among 4 bowls. Top each bowl with the beef and onion mixture, making sure to include some of the flavorful broth. If using eggs, place one on top of each bowl.
  7. Garnish and enjoy
    Sprinkle sliced green onions and pickled ginger over each bowl. Serve immediately while hot for the authentic Yoshinoya experience.
