  1. Prepare the rice
    Break up any clumps in the cold rice with your fingers to separate the grains. This helps achieve the perfect fried rice texture without stickiness.
  2. Cook the eggs
    Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add beaten eggs and scramble until just set but still moist, about 30 seconds. Remove from wok and set aside.
  3. Sauté aromatics
    Add remaining tablespoon of oil to the wok. Add minced garlic, ginger, and white parts of green onions. Stir-fry for 30 seconds until fragrant but not browned.
  4. Cook proteins
    Add shrimp to the wok and stir-fry for 1 minute until they start to turn pink. Add diced char siu pork and continue stir-frying for another minute.
  5. Add XO sauce
    Add XO sauce to the wok and stir vigorously to distribute the sauce evenly with the ingredients, allowing the complex flavors to bloom, about 1 minute.
  6. Combine with rice
    Add the cold rice to the wok, breaking up any remaining clumps. Stir-fry for 2-3 minutes, tossing constantly to coat the rice with the XO sauce mixture.
  7. Incorporate remaining ingredients
    Add the scrambled eggs, peas and carrots, soy sauce, and sesame oil. Continue stir-frying for another 2 minutes until everything is well combined and heated through.
  8. Finish and serve
    Turn off the heat and fold in the green parts of the green onions. Transfer to a serving dish and serve immediately while hot.
