  1. Prepare the rice
    Break up any clumps in the cold rice with your fingers or a fork. Cold, day-old rice works best as it's less sticky and will fry better.
  2. Sauté the garlic
    Heat vegetable oil or butter in a large wok or skillet over medium heat. Add minced garlic and cook until fragrant and golden brown, about 1-2 minutes, being careful not to burn it.
  3. Cook the vegetables
    Add the diced carrots to the pan and stir-fry for 2 minutes until slightly softened. Add the peas and continue cooking for another minute.
  4. Scramble the eggs
    Push the vegetables to one side of the pan and pour the beaten eggs into the empty space. Let them set slightly, then scramble until just cooked but still moist.
  5. Combine and fry the rice
    Add the cold rice to the pan, breaking up any clumps. Stir-fry for 3-4 minutes until the rice is heated through and starting to become crispy in places.
  6. Season the dish
    Drizzle soy sauce, mirin, and sesame oil over the rice. Sprinkle with white pepper. Toss everything together until the seasonings are evenly distributed and the rice takes on a light golden color.
  7. Finish and serve
    Mix in most of the sliced green onions, reserving some for garnish. Cook for another minute. Transfer to serving plates and top with the remaining green onions and crispy fried garlic if using.
