  1. Prepare the ingredients
    Arrange all your prepared ingredients (cooked noodles, prawns, vegetables, and herbs) on a large platter or individual plates. Make sure your work surface is clean and has enough space for rolling.
  2. Prepare the dipping sauce
    In a small bowl, combine the fish sauce, lime juice, sugar, garlic, and chili. Stir until the sugar is completely dissolved. Taste and adjust seasonings as needed - it should be a balance of sweet, sour, salty, and spicy flavors.
  3. Soften the rice paper
    Fill a large, shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it starts to soften but is still slightly firm (it will continue to soften as you work). Place it flat on a clean, damp kitchen towel.
  4. Assemble the rolls
    On the bottom third of the wrapper, place a lettuce leaf, followed by a small handful of noodles, a few pieces of carrot and cucumber, 3-4 prawn halves, and a selection of herb leaves. Make sure not to overfill, as this will make rolling difficult.
  5. Roll the rice paper
    Fold the bottom edge of the rice paper over the filling, then fold in the sides. Continue rolling tightly until completely sealed, like wrapping a burrito. The rice paper is sticky and will seal itself. Place the finished roll on a plate and cover with a damp cloth to prevent it from drying out.
  6. Repeat the process
    Continue with the remaining wrappers and filling ingredients until all the rice rolls are assembled. If the rice paper becomes too sticky to handle, slightly wet your hands with water.
  7. Serve and enjoy
    Cut the finished rolls in half diagonally if desired, and arrange them on a serving platter. Serve immediately with the dipping sauce, or refrigerate covered with a damp cloth for up to 2 hours before serving.
