
Japanese Sushi Rolls
Fresh, delicate sushi rolls with perfect balance of flavors

Prepare the ricePlace rinsed rice and water in a rice cooker and cook according to manufacturer's instructions. Alternatively, cook rice in a heavy-bottomed pot: bring to a boil, reduce heat to low, cover and simmer for 15 minutes until water is absorbed. Remove from heat and let stand, covered, for 10 minutes.

Season the riceIn a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until sugar dissolves. Fold this mixture into the cooked rice with a wooden spoon, being careful not to mash the rice. Fan the rice while mixing to cool it quickly to room temperature.

Prepare the fillingsWhile rice is cooling, prepare all your fillings. Cut cucumber, avocado, salmon, and imitation crab into thin strips about 4 inches long. Julienne the carrot into thin matchsticks. Arrange all fillings on a platter for easy access.

Set up rolling stationPlace a bamboo sushi mat on a clean work surface with slats running horizontally. Put a sheet of plastic wrap on top of the mat to prevent sticking. Place a sheet of nori, shiny side down, on the plastic wrap.

Form the sushi rollWith wet hands, spread about 3/4 cup of prepared rice evenly over the nori, leaving a 1-inch border at the top edge. Press rice gently but firmly to ensure it adheres to the nori. Arrange your chosen fillings in a horizontal line across the center of the rice.

Roll the sushiUsing the bamboo mat as a guide, lift the bottom edge of the nori and fold it over the fillings. Apply gentle pressure to shape the roll. Continue rolling forward, applying even pressure, until you reach the bare edge of nori. Moisten this edge with a little water to help seal the roll.

Slice the rollsUsing a very sharp knife dipped in water (to prevent sticking), cut each roll into 6-8 equal pieces. Clean the knife between cuts for the neatest presentation.

Serve the sushiArrange sushi rolls on a serving platter. Place small dishes of soy sauce, wasabi, and pickled ginger on the side. Serve immediately for the freshest taste and texture.
