  1. Prepare the pork ribs
    Rinse the pork ribs under cold water. Place in a pot, cover with cold water, and bring to a boil. Cook for 2-3 minutes, then drain and rinse again to remove impurities. This will give you a clearer broth.
  2. Start the broth
    In a large pot, add the cleaned pork ribs and 8 cups of water or pork broth. Bring to a boil, then reduce heat to low. Add sliced ginger, smashed garlic, and lemongrass. Simmer for 45 minutes or until the pork is tender, skimming any foam that rises to the surface.
  3. Prepare the lotus root
    While the broth simmers, soak the sliced lotus root in water with a splash of vinegar for 10 minutes to prevent discoloration. Drain well before adding to the soup.
  4. Add the lotus root
    Add the lotus root slices to the simmering broth. Continue cooking for 20-25 minutes or until the lotus root is tender but still slightly crisp.
  5. Season the soup
    Add fish sauce, rice vinegar, salt, and white pepper. Adjust seasonings to taste, finding a balance between savory, tangy, and slightly sweet flavors.
  6. Final touches
    Remove the lemongrass, ginger, and garlic pieces. Taste and adjust seasonings if needed. The broth should be clear with a fragrant aroma.
  7. Serve
    Ladle the hot soup into bowls, ensuring each serving has pieces of tender pork ribs and lotus root slices. Garnish with chopped green onions and fresh cilantro leaves. Serve immediately with steamed rice on the side.
