Marinate the porkIn a bowl, combine fish sauce, honey, minced garlic, and grated ginger. Add the sliced pork tenderloin, mix well to coat, and marinate for at least 15 minutes or up to 2 hours in the refrigerator.

Prepare the spicy mayoMix mayonnaise and Sriracha sauce in a small bowl until well combined. Adjust the spiciness to your preference by adding more or less Sriracha. Set aside for serving.

Cook the porkHeat a large skillet over medium-high heat. Add the marinated pork and cook for 3-4 minutes on each side until caramelized and cooked through. Remove from heat and let rest for 5 minutes before slicing into thin strips.

Warm the tortillasHeat the tortillas in a dry skillet for about 30 seconds on each side until warm and pliable, or wrap them in damp paper towels and microwave for 30 seconds.

Assemble the tacosSpread a thin layer of spicy mayo on each tortilla. Top with sliced pork, pickled daikon and carrot, cucumber slices, and jalapeño slices.

Add the finishing touchesGarnish each taco with fresh cilantro and mint leaves. Serve immediately with extra spicy mayo and lime wedges on the side.
