Prepare the brothIn a large pot, combine beef broth, half the sliced onion, ginger, star anise, cinnamon sticks, fish sauce, and brown sugar. Bring to a boil, then reduce heat and simmer for 20 minutes. Strain and keep warm.

Cook the beefPlace the thinly sliced beef in a bowl. Bring the strained broth back to a gentle boil and ladle about 2 cups over the beef. The hot broth will partially cook the beef. Let it sit for 2-3 minutes until the beef is medium-rare. Drain the beef, reserving the broth for serving.

Prepare the toppingsArrange bean sprouts, herbs, lime wedges, remaining sliced onion, and jalapeños on a serving platter. Place hoisin sauce and sriracha in small bowls for serving.

Warm the tortillasHeat the tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in damp paper towels and microwave for 30 seconds. Keep them warm in a clean kitchen towel.

Assemble the tacosPlace a small amount of cooked beef in each warm tortilla. Top with bean sprouts, herbs, onions, and jalapeños as desired. Serve with small bowls of warm broth for dipping or spooning over the tacos.
