
Vegetable Tagine with Chickpeas

Prepare the baseHeat olive oil in a large, heavy-bottomed pot or tagine over medium heat. Add onion and sauté until translucent, about 5 minutes. Add garlic and ginger and cook for another minute until fragrant.

Add spicesStir in the cumin, coriander, cinnamon, turmeric, and cayenne pepper. Toast the spices for 30 seconds until they become aromatic, being careful not to burn them.

Add vegetablesAdd sweet potatoes, carrots, and bell pepper to the pot. Stir well to coat with the spice mixture. Cook for 5 minutes, stirring occasionally.

Simmer the stewAdd diced tomatoes with their juice and 2 cups of water. Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes, or until the sweet potatoes are almost tender.

Finish the tagineAdd zucchini and chickpeas to the pot. Stir gently and cook uncovered for another 10-15 minutes until all vegetables are tender and the sauce has thickened. Season with salt and pepper to taste.

ServeGarnish with fresh cilantro leaves and serve hot with couscous or crusty bread. For an authentic experience, serve directly from the tagine if you're using one.
