  1. Prepare the vegetables
    Wash and roughly chop all vegetables. There's no need for precise cutting as they'll be strained out later. Larger pieces will help make straining easier.
  2. Sauté the aromatics
    Heat olive oil in a large stockpot over medium heat. Add onions, carrots, celery, and leek. Cook for 5-7 minutes until vegetables begin to soften and onions become translucent. Stir occasionally to prevent browning.
  3. Add remaining ingredients
    Add garlic, bay leaves, thyme, parsley, peppercorns, and tomato paste (if using). Stir to combine and cook for another 2 minutes until fragrant.
  4. Simmer the stock
    Pour in the cold water, ensuring all vegetables are submerged. Bring to a boil, then reduce heat to low. Simmer uncovered for about 1 hour, occasionally skimming any foam that rises to the surface.
  5. Strain and store
    Remove from heat and allow to cool slightly. Strain the stock through a fine-mesh sieve, pressing gently on solids to extract maximum flavor. Discard solids. Allow stock to cool completely before refrigerating for up to 5 days or freezing for up to 3 months.
