  1. Sauté the aromatics
    Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until vegetables begin to soften. Add garlic and cook for another 30 seconds until fragrant.
  2. Add vegetables and broth
    Add zucchini and green beans to the pot and cook for 2 minutes. Pour in diced tomatoes with their juice, vegetable broth, bay leaf, and oregano. Bring to a boil, then reduce heat to a simmer and cook for 15 minutes.
  3. Cook the pasta and beans
    Add the cannellini beans and pasta to the simmering soup. Cook for about 10 minutes or until the pasta is al dente. If the soup becomes too thick, add a little more broth or water.
  4. Finish the soup
    Stir in the fresh spinach and cook just until wilted, about 1 minute. Remove the bay leaf. Season with salt and freshly ground black pepper to taste. Stir in the Parmesan cheese until melted.
  5. Serve
    Ladle the hot soup into bowls. Sprinkle with additional Parmesan cheese and drizzle with a little extra virgin olive oil if desired. Serve with crusty Italian bread for a complete meal.
