
Vegetable Pakora

Prepare the batterIn a large mixing bowl, combine the chickpea flour, cumin seeds, coriander powder, red chili powder, turmeric powder, asafoetida, and salt. Gradually add water while whisking to create a smooth, thick batter with a consistency similar to pancake batter.

Prepare the vegetablesWash and thinly slice the potato, onion, spinach, and bell pepper. Finely chop the green chilies and cilantro. Make sure all vegetables are patted dry to prevent excess moisture in the batter.

Mix vegetables with batterAdd all the sliced and chopped vegetables to the batter. Mix gently until all vegetables are evenly coated. The mixture should be thick enough that the vegetables hold together.

Heat the oilIn a deep pan or kadhai, heat oil for deep frying over medium-high heat. To check if the oil is ready, drop a small amount of batter into the oil - it should rise to the surface immediately but not darken too quickly.

Fry the pakorasUsing a tablespoon or your fingers, carefully drop small portions of the vegetable batter mixture into the hot oil. Don't overcrowd the pan - fry in batches of 5-6 pakoras at a time, depending on the size of your pan.

Cook until goldenFry the pakoras for about 2-3 minutes, turning occasionally, until they are golden brown and crispy on all sides. Ensure they are cooked through by breaking one open - it should be crispy outside and fully cooked inside.

Drain excess oilRemove the pakoras with a slotted spoon and place them on paper towels to drain excess oil. Continue frying the remaining batter in batches.

Serve hotServe the pakoras immediately while still hot and crispy. Accompany with mint chutney, tamarind chutney, or ketchup for dipping. They pair perfectly with a cup of hot chai tea.
