  1. Prepare the potato filling
    Heat 2 tablespoons oil in a pan. Add mustard seeds and let them crackle. Add curry leaves, ginger-garlic paste, and chopped green chilies. Sauté for 1 minute until fragrant. Add the mashed potatoes, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes. Turn off heat, add lemon juice and fresh coriander. Allow the mixture to cool.
  2. Make the batter
    In a bowl, mix gram flour with 1/4 teaspoon turmeric, 1/2 teaspoon red chili powder, a pinch of salt, and enough water to make a smooth, thick batter of coating consistency. The batter should be thick enough to coat the back of a spoon.
  3. Shape and fry the vadas
    Divide the potato mixture into 4 equal portions and shape them into round patties. Dip each patty into the gram flour batter, ensuring it's fully coated. Heat oil in a deep pan for frying. Carefully slide the battered potato patties into the hot oil and fry until golden brown and crispy on both sides, about 3-4 minutes. Remove and drain on paper towels.
  4. Toast the pav
    Slice the bread rolls (pav) horizontally, keeping one edge intact. Heat a flat pan and add butter. Place the pav on the pan and toast until lightly golden on both cut sides.
  5. Assemble the vada pav
    Open the toasted pav and spread dry garlic chutney on the inside if using. Place the hot vada (potato fritter) inside the pav. Squeeze the pav gently to hold the vada in place. Serve immediately while still warm.
  6. Prepare accompaniments
    Vada pav is traditionally served with fried green chilies and additional chutneys on the side. You can offer green chutney (made from coriander and mint) and sweet tamarind chutney as accompaniments for guests to customize their vada pav.
