  1. Prepare the potato mixture
    In a large bowl, combine mashed potatoes with dabeli masala, salt, and sugar. Mix well until all the spices are evenly incorporated into the potatoes. The mixture should be flavorful and slightly sweet.
  2. Toast the buns
    Heat a large flat pan over medium heat. Add butter and allow it to melt. Split the pav buns horizontally and place them cut side down on the butter. Toast until golden brown and crispy, about 2 minutes. Remove and set aside.
  3. Cook the potato mixture
    In the same pan, add the prepared potato mixture and cook for 3-4 minutes, stirring occasionally. This helps the spices to develop flavor and the mixture to firm up slightly.
  4. Assemble the dabeli
    Spread tamarind chutney on the bottom half of each bun. Add a generous portion of the spiced potato mixture on top, pressing it down slightly to create an even layer.
  5. Add toppings
    Sprinkle crushed peanuts, pomegranate arils, chopped onions, and fresh coriander leaves over the potato mixture. Drizzle with date and garlic chutney.
  6. Finish with sev and serve
    Generously top with sev, which adds a crucial crunch to the dabeli. Place the top half of the bun over the filling and press gently. Serve immediately while the contrast between the warm potato filling and cool garnishes is at its peak.
