
Vegetable Consommé
Crystal-clear vegetable broth with delicate flavors

Prepare the vegetablesWash and finely dice all vegetables (carrots, celery, leek, onion, fennel, and tomatoes). Mince the garlic. Keep all vegetables separate for now.

Create the clarification mixtureIn a large bowl, combine the egg whites with 1/4 cup cold water and whisk until slightly frothy. Add all the diced vegetables except tomatoes and mix well to create what is called a 'raft.'

Heat the stockIn a large, tall stockpot, bring the vegetable stock to a simmer. Add the diced tomatoes and bouquet garni, then simmer for 10 minutes to extract flavors.

Add the clarification mixtureReduce heat to low. Gently add the vegetable and egg white mixture to the stock, stirring once to incorporate. Allow the mixture to rise to the surface naturally as it heats.

Create a ventOnce the raft forms on the surface, make a small hole in the center with a ladle. This acts as a chimney to allow steam to escape while maintaining the clarification process.

Simmer gentlySimmer very gently for 45-60 minutes without stirring. The raft will trap impurities while the clear consommé collects beneath it.

Strain the consomméLine a fine-mesh strainer with a damp cheesecloth and carefully ladle the clear consommé through it, making sure not to disturb the raft. Strain into a clean pot.

Season and serveGently heat the strained consommé and season with salt and white pepper to taste. Serve hot in warmed bowls, garnished with finely julienned vegetables or fresh herbs if desired.
