
Roasted Vegetable Tart

Prepare the vegetablesPreheat oven to 400°F (200°C). Toss the zucchini, yellow squash, bell peppers, eggplant, and red onion with 2 tablespoons olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, until vegetables are tender but not fully cooked.

Prepare the pastryMeanwhile, roll out the puff pastry on a lightly floured surface into a 12-inch circle or rectangle. Transfer to a parchment-lined baking sheet. Using a fork, prick the dough all over, leaving a 1-inch border around the edges.

Assemble the tartSpread the cheese evenly over the pastry, leaving the border clean. Arrange the roasted vegetables decoratively on top of the cheese. Fold the edges of the dough over the vegetables, pleating as necessary. Brush the pastry border with beaten egg.

Add herbs and seasoningsSprinkle the fresh thyme and rosemary over the vegetables. Drizzle with the remaining tablespoon of olive oil and season with additional salt and pepper to taste.

Bake the tartBake for 25-30 minutes, until the pastry is golden brown and crisp. Rotate the baking sheet halfway through cooking for even browning.

ServeRemove from oven and let cool for 5-10 minutes before cutting. Serve warm or at room temperature, garnished with additional fresh herbs if desired.
