
Mediterranean Quiche
A savory pie filled with feta, olives, and sun-dried tomatoes

Prepare the crustPreheat oven to 375°F (190°C). Place the pie crust in a 9-inch (23cm) pie dish, press it firmly against the bottom and sides, and trim any excess dough. Prick the bottom several times with a fork and pre-bake for 10 minutes until lightly golden.

Sauté the aromaticsWhile the crust is baking, heat olive oil in a skillet over medium heat. Add the sliced red onion and cook for 3-4 minutes until softened. Add minced garlic and cook for another 30 seconds until fragrant. Remove from heat and let cool slightly.

Prepare the fillingIn a large bowl, whisk together eggs and heavy cream until well combined. Stir in the feta cheese, Kalamata olives, sun-dried tomatoes, sautéed onion and garlic, chopped spinach, oregano, and basil. Season with salt and pepper.

Assemble the quichePour the filling mixture into the pre-baked crust, spreading the ingredients evenly throughout the dish. Make sure the solid ingredients are distributed evenly and not all clumped together.

Bake the quicheBake in the preheated oven for 35-40 minutes, or until the center is set and the top is golden brown. The quiche is done when a knife inserted in the center comes out clean.

Rest and serveAllow the quiche to rest for at least 10 minutes before slicing. This helps the filling to set completely and makes for cleaner slices. Serve warm or at room temperature with a side salad of mixed greens dressed with lemon vinaigrette.
