
Vegetable Borscht
Hearty Eastern European beet soup with fresh vegetables

Prepare the beetsPeel and grate the beets using a box grater or food processor. Set aside on a plate lined with paper towels to absorb excess moisture.

Sauté the aromaticsHeat olive oil in a large heavy-bottomed pot over medium heat. Add the onion, carrots, and celery. Cook for 7-8 minutes, stirring occasionally, until softened but not browned.

Add vegetables and seasoningsAdd the grated beets, minced garlic, and tomato paste to the pot. Stir and cook for 2-3 minutes until fragrant. Add the potato, cabbage, bay leaves, salt, and pepper. Stir to combine all ingredients.

Simmer the soupPour in the vegetable broth and bring to a boil. Reduce heat to a simmer, cover partially, and cook for 30-35 minutes, or until all vegetables are tender.

Balance the flavorsAdd the vinegar and sugar. Taste and adjust seasonings as needed. The soup should have a pleasant balance of sweet, sour, and savory flavors. Simmer for an additional 5 minutes.

Final touchesRemove bay leaves. Let the soup rest for 10 minutes off the heat to allow flavors to meld. The borscht can be served immediately but tastes even better the next day after flavors have fully developed.

ServeLadle the borscht into bowls. Top each serving with a dollop of sour cream and a sprinkle of fresh dill. Serve hot with a slice of dark rye bread on the side if desired.
