Instructions

  1. Prepare the beef
In a large pot, bring beef broth to a simmer. Add cubed beef and cook until tender, about 30-40 minutes. Remove the beef, strain the broth if necessary, and set both aside.
  2. Sauté the vegetables
In a large skillet, heat 2 tablespoons of oil over medium heat. Add onions and carrots, sautéing until soft and golden, about 7-8 minutes. Add tomato paste and cook for another 2-3 minutes, stirring constantly.
  3. Combine meats
Add the cooked beef, ham, and sausage to the skillet with vegetables. Cook together for 5 minutes, allowing the flavors to combine.
  4. Prepare the soup base
Return the beef broth to heat and bring to a simmer. Add the meat and vegetable mixture to the broth. Add bay leaves and peppercorns.
  5. Add pickles and capers
Stir in the diced pickles, pickle brine, and capers with juice. Simmer for 15-20 minutes, allowing the soup to develop its characteristic sour flavor.
  6. Final touches
Taste and adjust seasoning as needed. Add a few slices of lemon to the pot and simmer for an additional 5 minutes. Remove bay leaves and peppercorns before serving.
  7. Serve
Ladle the hot solyanka into bowls. Add a dollop of sour cream and sprinkle with fresh herbs. Serve with additional lemon slices on the side for those who prefer an extra sour kick.
