Mix the DoughAdd olive oil to the yeast mixture, then gradually mix in the flour and salt. Stir until a shaggy dough forms. Turn onto a floured surface and knead for 8-10 minutes until smooth and elastic.

First RisePlace the dough in an oiled bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour 30 minutes, or until doubled in size.

Add the Olives and HerbsPunch down the dough and turn it onto a floured surface. Pat it into a rectangle, then evenly distribute the chopped olives, rosemary, oregano, black pepper, and red pepper flakes (if using) over the surface. Fold and knead gently to incorporate the ingredients throughout the dough.

Shape and Second RiseShape the dough into a round loaf or oval, depending on preference. Place on a parchment-lined baking sheet, cover with a clean kitchen towel, and let rise for another 45 minutes until puffy.
