Crispy Filipino banana spring rolls with caramelized sugar

Prepare the fillingPlace the brown sugar in a shallow dish. If using cinnamon, mix it with the sugar. Roll the halved bananas and jackfruit strips in the sugar mixture to coat them evenly. Set aside any remaining sugar for later use.

Assemble the turonLay a spring roll wrapper on a clean, flat surface with one corner pointing toward you. Place a sugar-coated banana half and a few strips of jackfruit about 2 inches from the bottom corner. Fold the bottom corner over the filling, then fold in the sides. Roll tightly toward the top corner. Wet the top corner with water to seal. Repeat with remaining wrappers and filling.

Heat the oilIn a large, deep skillet or wok, heat the vegetable oil over medium heat until it reaches approximately 350°F (175°C). The oil should be hot enough that a small piece of wrapper sizzles immediately when dropped in.

Fry the turonCarefully place several turon in the hot oil, being careful not to overcrowd the pan. Fry until golden brown on all sides, about 2-3 minutes per side. If desired, sprinkle some of the remaining sugar into the oil during frying to create a caramelized coating on the turon.

Drain and coolRemove the fried turon using a slotted spoon or tongs and place on paper towels to drain excess oil. Allow to cool slightly before serving, as the caramelized sugar and filling will be extremely hot.

Serve and enjoyArrange the turon on a serving plate. They can be enjoyed warm or at room temperature as a snack or dessert. For added indulgence, serve with a scoop of vanilla ice cream or a drizzle of caramel sauce.
