Prepare the coffeeMeasure the water and pour it into a cezve (Turkish coffee pot) or small saucepan. Add the finely ground coffee, sugar, and any optional spices you choose to use. Do not stir yet.

Heat the mixturePlace the cezve on low heat. As the coffee heats, it will start to sink into the water. Once this happens, stir gently to combine all ingredients, then do not stir again.

Watch for foamAs the coffee heats, a dark foam will begin to form on the surface. Watch carefully, as the coffee can boil over quickly. Just before it boils (when the foam rises), remove from heat.

Create the foamSpoon some of the foam into each coffee cup. Return the pot to the heat and allow it to rise again, almost to the point of boiling, then remove from heat.

Serve the coffeePour the coffee slowly into the cups, distributing the foam evenly. If using rosewater, add a few drops to each cup. Allow the coffee grounds to settle for about 30 seconds before drinking.
