Prepare the fillingIn a large bowl, combine the crumbled feta, grated kasseri cheese, chopped parsley, dill, green onions, beaten eggs, and black pepper. Mix thoroughly until well combined and set aside.

Prepare the butter mixtureIn a small bowl, mix the melted butter with olive oil. This will be used to brush between phyllo layers.

Layer the phylloPreheat oven to 350°F (175°C). Brush a 9x13 inch baking pan with the butter-oil mixture. Lay a sheet of phyllo dough in the pan, allowing edges to hang over. Brush with butter-oil mixture. Repeat with 5 more sheets, brushing each layer.

Add the fillingSpread the cheese filling evenly over the phyllo layers in the pan. Press down lightly to create an even surface.

Cover with remaining phylloPlace another sheet of phyllo on top of the filling. Brush with butter-oil mixture. Repeat with the remaining phyllo sheets, brushing each layer generously. Fold over any overhanging edges and brush with butter.

Score and garnishUsing a sharp knife, score the top layers of phyllo into squares or diamond shapes, being careful not to cut all the way through to the filling. Sprinkle sesame seeds and nigella seeds (if using) over the top.

Bake until goldenBake in the preheated oven for 35-40 minutes, or until the börek is golden brown and crispy on top. Let it cool for 10 minutes before serving.
