Instructions

  1. Prepare the baking dish
Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish or quiche pan with olive oil or non-stick cooking spray.
  2. Sauté the aromatics
Heat the olive oil in a skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant. Remove from heat and let cool slightly.
  3. Prepare the egg mixture
In a large bowl, whisk together the eggs, milk, and heavy cream until well combined. Season with salt and pepper. Stir in the cooled onion and garlic mixture.
  4. Add the cheeses and tomatoes
Fold in 3/4 of the mozzarella cheese, half of the Parmesan cheese, half of the sliced basil, and half of the halved cherry tomatoes into the egg mixture.
  5. Bake the quiche
Pour the mixture into the prepared baking dish. Arrange the remaining cherry tomatoes on top, cut-side up. Sprinkle with the remaining mozzarella and Parmesan cheese. Bake for 30-35 minutes, or until the center is set and the top is golden brown.
  6. Finish and serve
Remove from the oven and let the quiche cool for 10 minutes. Sprinkle with the remaining fresh basil. Slice into wedges and serve warm or at room temperature.
