  1. Prepare the broth
    In a large pot, bring the stock to a boil. Add the lemongrass, kaffir lime leaves, galangal, and Thai chilies. Reduce heat and simmer for 10 minutes to infuse the flavors.
  2. Add the aromatics
    Stir in the Thai chili paste until dissolved. Add the mushrooms and simmer for 2-3 minutes until they start to soften.
  3. Cook the seafood
    Add the fish pieces first and cook for about 2 minutes. Then add the shrimp and squid, cooking for an additional 2-3 minutes until all seafood is just cooked through. Be careful not to overcook the seafood.
  4. Season the soup
    Turn off the heat. Add the fish sauce, lime juice, and palm sugar. Stir well to combine and taste, adjusting the seasonings if needed. The soup should have a balanced hot, sour, and slightly sweet flavor.
  5. Serve the soup
    Ladle the soup into serving bowls, making sure each bowl gets a good portion of seafood. Garnish with fresh cilantro leaves and sliced green onions. Serve immediately while hot.
