  1. Prepare the tocino marinade
    In a large bowl, mix together sugar, salt, black pepper, pineapple juice, soy sauce, and annatto powder. Add the sliced pork and mix well to coat each piece. Marinate in the refrigerator for at least 4 hours, preferably overnight.
  2. Cook the tocino
    Heat 1 tablespoon of oil in a large non-stick pan over medium heat. Add the marinated pork slices and cook for about 8-10 minutes, turning occasionally, until the meat is caramelized and fully cooked. The sugar in the marinade will create a sweet glaze. Set aside and keep warm.
  3. Prepare the sinangag (garlic rice)
    In another pan, heat 2 tablespoons of oil over medium-high heat. Add the minced garlic and sauté until golden brown and fragrant, about 1-2 minutes. Add the cold cooked rice, breaking up any lumps, and stir-fry for about 5 minutes until the rice is heated through and well mixed with the garlic.
  4. Cook the itlog (eggs)
    In a separate non-stick pan, heat a small amount of oil over medium heat. Crack the eggs into the pan and fry to your preference (sunny side up is traditional, but you can also prepare them over easy). Season with a pinch of salt and pepper.
  5. Assemble the tocilog
    Divide the garlic rice among four plates. Place a portion of tocino on each plate alongside two fried eggs. Serve with a small dish of vinegar on the side for dipping the tocino if desired.
  6. Garnish and serve
    Optionally garnish with sliced tomatoes, cucumber, or green onions for added freshness and color. Serve immediately while everything is hot.
