  1. Prepare the noodles
    Soak the rice noodles in warm water for 15-20 minutes until softened but still firm. Drain well and set aside. This prevents them from becoming too mushy when added to the soup.
  2. Create the aromatic broth
    In a large pot, bring the chicken broth to a boil. Add the lemongrass, kaffir lime leaves, and galangal or ginger. Reduce heat to medium-low and simmer for 10 minutes to infuse the flavors.
  3. Add the flavor base
    Stir in the Thai chili paste (Nam Prik Pao) and fish sauce. Add the mushrooms and simmer for another 5 minutes until the mushrooms are tender.
  4. Cook the shrimp
    Add the shrimp to the broth and cook for 2-3 minutes until they turn pink and are just cooked through. Be careful not to overcook them as they will become tough.
  5. Finish the soup
    Reduce heat to low and stir in the coconut milk. Add the lime juice and sliced chilies. Taste and adjust the seasoning with more fish sauce or lime juice if needed.
  6. Combine with noodles
    Place a portion of the prepared rice noodles in each serving bowl. Ladle the hot soup with shrimp and mushrooms over the noodles.
  7. Garnish and serve
    Sprinkle each bowl with fresh cilantro and sliced green onions. Serve immediately while hot, with extra lime wedges and chili slices on the side for those who prefer extra heat and acidity.
