Prepare the peanut sauceIn a medium bowl, whisk together peanut butter, soy sauce, lime juice, honey, sriracha, and 2-3 tablespoons of warm water until smooth. The sauce should be thick but pourable. Set aside.

Cook the chickenHeat sesame oil in a large skillet over medium-high heat. Add minced garlic and stir for 30 seconds until fragrant. Add the sliced chicken and cook for 6-8 minutes until fully cooked and slightly browned. Remove from heat and toss with 1/4 cup of the peanut sauce.

Prepare the vegetablesIn a large bowl, combine shredded carrots, julienned cucumber, sliced bell pepper, chopped cilantro, and green onions. Toss with 2 tablespoons of the peanut sauce.

Warm the tortillasHeat the tortillas or flatbreads in a dry skillet for about 30 seconds per side, or microwave them covered with a damp paper towel for 20 seconds until warm and pliable.

Assemble the wrapsLay each tortilla flat and spread 1 tablespoon of peanut sauce in the center. Layer with a quarter of the chicken mixture and a quarter of the vegetable mixture. Sprinkle with chopped peanuts.

Roll and serveFold in the sides of each tortilla, then roll tightly from the bottom up to enclose the filling. Cut each wrap in half diagonally. Serve with the remaining peanut sauce for dipping.
