Prepare the sauceIn a medium bowl, whisk together peanut butter, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, and red curry paste until smooth. Gradually add coconut milk, whisking continuously until fully incorporated and set aside.

Cook the chickenHeat vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook for 6-8 minutes until golden brown and cooked through. Transfer to a plate and set aside.

Sauté the vegetablesIn the same skillet, add the red bell pepper and snap peas. Sauté for 3-4 minutes until vegetables begin to soften but still maintain their crispness.

Combine and simmerReturn the chicken to the skillet with the vegetables. Pour the peanut sauce over the mixture and stir to combine. Reduce heat to medium-low and simmer for 5-7 minutes, until the sauce thickens slightly and everything is heated through.

Adjust seasoningTaste and adjust seasoning if needed. Add more lime juice for acidity, soy sauce for saltiness, or brown sugar for sweetness depending on your preference.

Serve and garnishTransfer to a serving dish and garnish with chopped roasted peanuts and fresh cilantro. Serve hot over steamed jasmine rice or rice noodles.
