
Thai Khao Tom
Fragrant Thai rice soup with aromatic herbs and protein

Prepare the proteinIn a small bowl, mix the ground pork (or chicken) with 1 tablespoon of fish sauce and set aside to marinate while preparing other ingredients.

Start the soup baseIn a large pot over medium heat, add the vegetable oil. Add minced garlic, julienned ginger, and the white parts of the green onions. Sauté for 1-2 minutes until fragrant but not browned.

Cook the meatAdd the marinated ground meat to the pot and cook, breaking it up with a wooden spoon, until no longer pink, about 3-4 minutes.

Add broth and ricePour in the chicken broth and bring to a gentle boil. Add the cooked jasmine rice, stirring to break up any clumps. Reduce heat and simmer for 10-15 minutes until the rice has softened further and the flavors have melded.

Season the soupAdd the remaining fish sauce, soy sauce, and white pepper. Taste and adjust seasoning if needed. The soup should have a balanced savory flavor with a hint of saltiness from the fish sauce.

Finish and serveJust before serving, stir in the chopped cilantro and the green parts of the green onions. Ladle the hot soup into bowls and garnish with additional cilantro, fried garlic (if using), and a lime wedge on the side for squeezing over the soup.
