Prepare the aromaticsHeat the vegetable oil in a large pot over medium heat. Add the curry paste and stir-fry for 1-2 minutes until fragrant, being careful not to burn it.

Create the soup baseAdd the coconut milk, seafood broth, fish sauce, palm sugar, kaffir lime leaves, lemongrass, and galangal. Bring to a gentle simmer and cook for 10 minutes to allow the flavors to meld.

Add the vegetablesAdd the red bell pepper and snap peas to the soup. Simmer for another 5 minutes until the vegetables are tender but still crisp.

Incorporate the crabGently fold in the crab meat and cook for 2-3 minutes until just heated through. Be careful not to break up the crab chunks too much.

Balance the flavorsRemove from heat and stir in the lime juice. Taste and adjust seasoning with more fish sauce or sugar if needed. Remove the lemongrass, galangal, and kaffir lime leaves before serving.
