  1. Prepare the aromatics
    Heat vegetable oil in a large pot over medium heat. Add the curry paste and stir for 1-2 minutes until fragrant. Add the sliced onion, minced garlic, and grated ginger, and cook for 3-4 minutes until softened.
  2. Create the curry base
    Pour in the coconut milk and stir well to combine with the curry paste mixture. Add the kaffir lime leaves and lemongrass if using. Bring to a gentle simmer, then reduce heat to medium-low.
  3. Cook the protein
    Add the chicken pieces (or tofu) to the simmering curry sauce. Cook for 10-12 minutes until the chicken is fully cooked through and tender, stirring occasionally.
  4. Add vegetables
    Add the mixed vegetables to the pot and continue to simmer for 5-7 minutes until they are tender but still have some crispness. Harder vegetables like carrots may need to be added earlier than softer ones like bell peppers.
  5. Season the curry
    Stir in the fish sauce (or soy sauce) and palm sugar. Taste and adjust seasonings as needed. The curry should have a balance of spicy, savory, and slightly sweet flavors.
  6. Finish and serve
    Remove the kaffir lime leaves and lemongrass pieces. Garnish with fresh Thai basil and cilantro leaves. Serve hot over steamed jasmine rice or with rice noodles.
