Ingredients
Instructions
-
Prepare the marinadeIn a medium bowl, whisk together the fish sauce, lime juice, brown sugar, minced garlic, and red curry paste until well combined and the sugar has dissolved.
-
Marinate the chickenAdd the sliced chicken thighs to the marinade, toss to coat evenly, and let it marinate for at least 15 minutes (or up to 4 hours in the refrigerator for more flavor).
-
Cook the chickenHeat the vegetable oil in a large skillet over medium-high heat. Using tongs, transfer the marinated chicken to the hot skillet, reserving the marinade. Cook the chicken for about 5-7 minutes, stirring occasionally, until browned and cooked through.
-
Finish the chickenPour the reserved marinade into the skillet and bring to a simmer. Cook for another 2-3 minutes until the sauce thickens slightly and coats the chicken. Remove from heat.
-
Prepare the tortillasWarm the tortillas according to package instructions, either in the microwave, oven, or in a dry skillet for about 30 seconds per side until soft and pliable.
-
Assemble the tacosSpread a small amount of sriracha mayo on each tortilla. Top with the cooked Thai chicken, shredded cabbage, sliced red bell pepper, cilantro, and mint leaves. Sprinkle with chopped peanuts.
-
ServeServe immediately with lime wedges on the side for squeezing over the tacos. Offer additional sriracha mayo for those who want extra spice.
