  1. Prepare the sauce
    In a small bowl, mix together the fish sauce, oyster sauce, soy sauce, dark soy sauce, and sugar until the sugar dissolves. Set aside.
  2. Heat the wok
    Heat a wok or large skillet over high heat. Add the vegetable oil and when hot, add the minced garlic and chilies. Stir-fry for about 30 seconds until fragrant but not burnt.
  3. Cook the pork
    Add the ground pork to the wok, breaking it up with a spatula. Stir-fry for 3-4 minutes until the pork is no longer pink and begins to brown.
  4. Add the sauce and aromatics
    Pour the prepared sauce into the wok and add the sliced shallots or onions. Stir-fry for another minute. If the mixture seems dry, add the chicken stock or water.
  5. Finish with basil
    Turn off the heat and add the Thai basil leaves, stirring quickly to incorporate them. The residual heat will wilt the basil while maintaining its flavor and aroma.
  6. Prepare the fried eggs (optional)
    In a separate pan, heat a tablespoon of oil over medium-high heat. Crack eggs one at a time and fry until the edges are crispy and the yolks are still runny, about 2-3 minutes.
  7. Serve
    Serve the Thai basil pork hot over steamed jasmine rice. If using, place a fried egg on top of each serving. Traditionally, this dish is accompanied by sliced cucumber and a wedge of lime.
