  1. Prepare the custard base
    In a large bowl, gently beat the eggs, being careful not to create air bubbles. Add dashi stock, mirin, soy sauce, salt, and grated ginger. Stir slowly until thoroughly combined, then strain the mixture through a fine-mesh sieve to remove any egg solids.
  2. Prepare the ramekins
    Divide the sliced shiitake mushrooms, chicken pieces, and shrimp (if using) evenly among four heatproof ramekins or small bowls. Pour the egg mixture into each ramekin, filling to about 80% capacity.
  3. Cover and steam
    Cover each ramekin with aluminum foil to prevent condensation from dripping onto the custard. Place the ramekins in a steamer basket over simmering water. Cover the steamer and cook on medium-low heat for about 20-25 minutes, or until the custard is set but still slightly jiggly in the center.
  4. Test for doneness
    Check if the tamago tofu is done by inserting a toothpick into the center. If it comes out clean with no raw egg mixture, the custard is ready. The texture should be silky and smooth, similar to soft tofu.
  5. Serve
    Carefully remove the ramekins from the steamer and let them cool slightly for 3-5 minutes. Garnish with mitsuba or chopped green onions. Serve warm as an appetizer or side dish.
