  1. Prepare the batter
    In a large mixing bowl, whisk together the flour and eggs. Gradually add in the milk and water, stirring to combine. Add the melted butter, sugar, salt, and vanilla extract. Whisk until the batter is smooth with no lumps. Let the batter rest for at least 10 minutes, or refrigerate for up to 1 hour.
  2. Heat the pan
    Place a non-stick crepe pan or 8-inch skillet over medium heat. Add a small amount of oil or butter and swirl to coat the surface evenly.
  3. Cook the crepes
    Pour about 1/4 cup of batter into the center of the pan, then immediately tilt and rotate the pan to spread the batter in a thin, even layer. Cook for 1-2 minutes until the edges begin to brown and the center looks set. Carefully flip the crepe using a spatula and cook for another 30-60 seconds on the second side.
  4. Stack and keep warm
    Transfer the cooked crepe to a plate and cover with a clean kitchen towel to keep warm. Repeat the process with the remaining batter, adding more oil or butter to the pan as needed. Stack the crepes as you cook them.
  5. Prepare fillings
    While cooking the crepes, prepare your chosen fillings. Wash and slice fresh fruits, open jars of spreads, and have powdered sugar ready for dusting.
  6. Fill and serve
    To serve, place a crepe on a plate. Spread a thin layer of Nutella, jam, or other spread on half of the crepe. Add sliced fruits if desired. Fold the crepe in half, and then in half again to form a triangle. Alternatively, roll the crepe into a cylinder. Dust with powdered sugar and serve immediately.
