Activate the yeastIn a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5-10 minutes until foamy. This indicates that your yeast is active and ready to use.

Prepare the doughIn a large mixing bowl, combine flour, salt, and baking powder. Make a well in the center and pour in the yeast mixture and vegetable oil. Mix until a dough forms, then turn out onto a floured surface and knead for 8-10 minutes until smooth and elastic.

First risePlace the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size. The dough should feel light and puffy when properly risen.

Shape the bunsPunch down the dough and turn it out onto a lightly floured surface. Knead briefly, then roll into a long log and divide into 16 equal pieces. Roll each piece into a ball, then flatten with a rolling pin into a 3.5-inch disc. If adding sesame oil, brush lightly on one side.

Form the bao shapeFold each disc in half and gently press the edges together, then place on a small square of parchment paper. The paper prevents the buns from sticking to the steamer and makes them easier to handle.

Second riseArrange the shaped buns on a baking sheet, cover with a clean kitchen towel, and let them rise for another 20-30 minutes until they look puffy but not fully doubled in size.

Steam the bunsSet up your steamer over boiling water. Place the buns in the steamer basket, leaving at least 1 inch between each bun as they will expand during cooking. Steam for 10-12 minutes on high heat. Do not open the lid during steaming as this can cause the buns to collapse.

Cool and serveWhen the buns are done, turn off the heat but do not open the steamer immediately. Wait 2-3 minutes before opening to prevent the buns from collapsing due to the sudden temperature change. Serve warm with your favorite fillings such as braised pork belly, BBQ chicken, or seasoned vegetables.
