  1. Prepare the spinach
    Wash the spinach thoroughly under cold running water to remove any dirt or sand. Remove any tough stems and tear larger leaves if necessary.
  2. Blanch the spinach
    Bring a large pot of water to a boil and add a pinch of salt. Add the spinach and blanch for 30-45 seconds until wilted but still bright green. Immediately transfer to a bowl of ice water to stop the cooking process.
  3. Drain and squeeze
    Drain the spinach thoroughly and squeeze out excess water with your hands. Form the spinach into a log shape and cut into 2-inch segments. Set aside.
  4. Toast the sesame seeds
    In a dry skillet over medium heat, toast the sesame seeds, shaking the pan frequently, until they become fragrant and slightly golden, about 2-3 minutes. Be careful not to burn them.
  5. Grind the sesame seeds
    Transfer the toasted sesame seeds to a mortar and pestle or a food processor. Grind them until most seeds are crushed but not completely turned into a paste, leaving some texture.
  6. Make the dressing
    In a small bowl, combine the ground sesame seeds, soy sauce, sugar, mirin, dashi powder (if using), grated ginger, and sesame oil. Mix well until the sugar dissolves.
  7. Combine and serve
    In a mixing bowl, gently toss the drained spinach with the sesame dressing until evenly coated. Serve immediately or chilled as a side dish.
