
Spicy Tuna Sushi Roll

Prepare the sushi riceCombine rinsed rice and water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer rice to a large wooden bowl and gently fold in vinegar mixture. Fan rice while mixing to cool it quickly. Cover with a damp cloth until ready to use.

Make the spicy tuna mixtureIn a medium bowl, combine the diced tuna, mayonnaise, sriracha sauce, sesame oil, and 2 tablespoons of the sliced green onions. Gently fold until all ingredients are well incorporated. Cover and refrigerate until ready to use.

Set up your rolling stationPlace a bamboo sushi mat on a clean work surface. Cover the mat with plastic wrap to prevent sticking. Have a small bowl of water with a splash of rice vinegar nearby to wet your hands when handling the rice. Arrange the prepared rice, spicy tuna mixture, nori sheets, avocado slices, and sesame seeds within easy reach.

Assemble and rollPlace a sheet of nori shiny side down on the mat. With wet hands, spread about ½ cup of sushi rice evenly over the nori, leaving a 1-inch border at the top edge. Sprinkle with toasted sesame seeds. Flip the nori over so the rice side is down against the mat. Along the bottom third of the nori, arrange a line of spicy tuna mixture (about 3 tablespoons) and a few avocado slices.

Complete the rollUsing the bamboo mat as a guide, tightly roll the sushi away from you, applying gentle pressure to keep the roll firm. Seal the edge with a bit of water on your fingertips. Gently squeeze the bamboo mat around the roll to shape and compact it.

Slice and serveWith a very sharp knife, cut the roll into 6 equal pieces. Clean the knife with a damp cloth between cuts for cleaner slices. Arrange sushi on a serving plate. Garnish with remaining green onions. Serve immediately with soy sauce, wasabi, and pickled ginger on the side.
