Prepare the seafoodClean all seafood thoroughly. Pat the fish dry with paper towels and season with salt and pepper. Clean the mussels by scrubbing the shells and removing the beards. Ensure shrimp are peeled and deveined, leaving tails intact. Cut squid into rings if not already prepared.

Create the flavor baseHeat olive oil in a large, heavy-bottomed pot over medium heat. Add the onions and cook until translucent, about 5 minutes. Add the garlic and red bell pepper, cooking for another 3 minutes until softened. Stir in the tomato paste and cook for 1 minute to remove the raw flavor.

Build the brothPour in the white wine and simmer for 2 minutes to reduce slightly. Add the diced tomatoes, fish stock, smoked paprika, saffron with its soaking water, and bay leaves. Season with salt and pepper. Bring to a gentle boil, then reduce heat and simmer for 10 minutes to allow flavors to meld.

Cook the seafoodAdd the firm white fish pieces to the simmering broth and cook for 2 minutes. Add the squid rings and cook for another minute. Finally, add the shrimp and mussels, cover the pot, and cook for 3-4 minutes until the mussels open and the shrimp turn pink. Discard any mussels that don't open.

Finish the stewRemove the bay leaves. Taste the broth and adjust seasoning if necessary. If the stew is too thick, add a little more fish stock. If it's too thin, simmer uncovered for a few more minutes to reduce.

ServeLadle the stew into warm, shallow bowls. Arrange the seafood evenly between servings. Drizzle with a little extra virgin olive oil and sprinkle with chopped fresh parsley. Serve immediately with crusty bread for dipping into the flavorful broth.
