Smoked Salmon and Cucumber Salad
A refreshing and elegant salad with smoky and citrus notes
Ingredients
Instructions
-
Prepare the cucumbersSlice the English cucumbers thinly (about ⅛ inch thick). If desired, use a mandoline for uniform slices. If using regular cucumbers, peel them first and remove the seeds.
-
Prepare the salmonCarefully separate the smoked salmon slices and cut them into bite-sized pieces. Keep refrigerated until ready to assemble the salad.
-
Make the dressingIn a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper. If using, add the Greek yogurt for a creamier dressing and whisk until smooth.
-
Assemble the saladIn a large bowl, combine the cucumber slices, red onion slices, and capers. Pour half of the dressing over the vegetables and toss gently to coat.
-
Add the salmonCarefully fold in the smoked salmon pieces, being careful not to break them up too much. Drizzle the remaining dressing over the salad.
-
Finish and serveSprinkle the chopped fresh dill over the salad. For best flavor, allow the salad to rest in the refrigerator for 10-15 minutes before serving to let the flavors meld together.
