  1. Prepare the cucumbers
    Slice the English cucumbers thinly (about ⅛ inch thick). If desired, use a mandoline for uniform slices. If using regular cucumbers, peel them first and remove the seeds.
  2. Prepare the salmon
    Carefully separate the smoked salmon slices and cut them into bite-sized pieces. Keep refrigerated until ready to assemble the salad.
  3. Make the dressing
    In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper. If using, add the Greek yogurt for a creamier dressing and whisk until smooth.
  4. Assemble the salad
    In a large bowl, combine the cucumber slices, red onion slices, and capers. Pour half of the dressing over the vegetables and toss gently to coat.
  5. Add the salmon
    Carefully fold in the smoked salmon pieces, being careful not to break them up too much. Drizzle the remaining dressing over the salad.
  6. Finish and serve
    Sprinkle the chopped fresh dill over the salad. For best flavor, allow the salad to rest in the refrigerator for 10-15 minutes before serving to let the flavors meld together.
