  1. Prepare the salmon
    Ensure the salmon is very fresh and sushi-grade. Using a sharp knife, carefully dice the salmon into 1/4-inch cubes. Place in a large bowl and refrigerate while preparing other ingredients.
  2. Mix the dressing
    In a small bowl, whisk together the lemon juice, lemon zest, olive oil, and Dijon mustard until well combined. Season with salt and pepper.
  3. Combine ingredients
    Add the minced shallot, dill, chives, capers, cucumber, and diced avocado to the bowl with the salmon. Gently fold the ingredients together, being careful not to mash the salmon or avocado.
  4. Add dressing
    Pour the dressing over the salmon mixture and gently toss to coat all ingredients evenly. Taste and adjust seasoning if necessary.
  5. Chill and serve
    Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld. Serve chilled, using a ring mold to create an elegant presentation, or simply spoon onto plates. Garnish with extra dill sprigs if desired.
