Prepare the dry ingredientsIn a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Mix the wet ingredientsIn a separate medium bowl, whisk together the skyr, eggs, milk, melted butter, vanilla extract, and lemon zest (if using) until smooth.

Combine the batterPour the wet ingredients into the dry ingredients and gently fold together with a rubber spatula until just combined. Some small lumps are fine - do not overmix or the pancakes will become tough. Let the batter rest for 5 minutes.

Heat the cooking surfaceHeat a griddle or large non-stick skillet over medium heat. Add a small amount of butter to coat the surface.

Cook the pancakesFor each pancake, pour about 1/4 cup of batter onto the griddle. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until golden brown on the second side, about 1-2 minutes more.

Keep warm and continueTransfer cooked pancakes to a plate and keep warm in a 200°F (95°C) oven while cooking the remaining batter. Add more butter to the griddle as needed between batches.
