Ingredients
Instructions
-
Prepare the dry ingredientsIn a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined and free of lumps.
-
Mix the wet ingredientsIn a separate bowl, whisk together the kefir, eggs, melted butter, and vanilla extract until smooth and fully incorporated.
-
Combine the batterPour the wet ingredients into the dry ingredients and stir gently with a wooden spoon or rubber spatula until just combined. Some small lumps are fine - do not overmix. Let the batter rest for 5 minutes to allow the leavening agents to activate.
-
Heat the panHeat a large non-stick skillet or griddle over medium heat. Lightly brush with vegetable oil or butter to prevent sticking.
-
Cook the pancakesFor each pancake, pour about 1/4 cup of batter onto the hot surface. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip carefully with a thin spatula and cook until golden brown on the second side, about 1-2 minutes more.
-
Keep warmTransfer cooked pancakes to a plate and keep warm in a 200°F (95°C) oven while cooking the remaining batter. Add a little more oil to the pan between batches if needed.
-
ServeServe the pancakes warm, topped with fresh berries, a drizzle of maple syrup, or your favorite pancake toppings. For an authentic Russian touch, serve with sour cream and honey.
