  1. Prepare the filling
    In a large mixing bowl, combine the ground pork, chopped shrimp, diced shiitake mushrooms, water chestnuts, and green onions. Mix well to distribute all ingredients evenly.
  2. Season the mixture
    Add the grated ginger, soy sauce, sesame oil, Shaoxing wine, sugar, and white pepper to the meat mixture. Stir thoroughly until all seasonings are incorporated. For best results, stir in one direction until the mixture becomes sticky and well-bound.
  3. Form the dumplings
    Place a heaping tablespoon of filling in the center of each dumpling wrapper. Gather the edges of the wrapper up around the filling, creating a basket shape with the filling exposed on top. Gently tap the bottom of each dumpling on your work surface to create a flat base so it can stand upright.
  4. Add garnish
    Press a green pea into the center of each dumpling for a traditional garnish and pop of color. Alternatively, you can use a small piece of carrot or finely diced red pepper.
  5. Prepare the steamer
    Line a bamboo steamer with parchment paper or cabbage leaves to prevent sticking. Arrange the dumplings in the steamer, leaving about 1 inch between each to allow for expansion. Make sure they're standing upright with the open filling facing up.
  6. Steam the shu mai
    Place the steamer over a pot of boiling water, making sure the water doesn't touch the bottom of the steamer. Cover and steam for 8-10 minutes until the filling is cooked through and the wrappers are translucent.
  7. Prepare dipping sauce
    While the dumplings are steaming, mix the black vinegar, soy sauce, and chili oil in a small bowl. Adjust proportions to taste, adding more chili oil for extra heat if desired.
  8. Serve
    Carefully transfer the hot shu mai to a serving plate. Serve immediately with the dipping sauce on the side. These dumplings are best enjoyed fresh from the steamer while still hot.
