  1. Prepare the shrimp
    Chop the shrimp into small pieces, about 1/2-inch in size. Pat dry with paper towels to remove excess moisture, which will help them sear properly.
  2. Make the sauce
    In a small bowl, whisk together the soy sauce, fish sauce, honey, and lime juice until well combined. Set aside.
  3. Cook the shrimp
    Heat the vegetable oil in a large skillet over medium-high heat. Add the minced garlic and grated ginger, cooking for 30 seconds until fragrant. Add the chopped shrimp and cook for 3-4 minutes, stirring frequently, until they turn pink and opaque.
  4. Finish the filling
    Pour the prepared sauce over the cooked shrimp and stir to coat evenly. Cook for another 1-2 minutes until the sauce slightly thickens and sticks to the shrimp. Remove from heat and let cool slightly.
  5. Prepare the vegetables
    While the shrimp mixture is cooling, prepare the vegetables. Julienne the carrots, dice the cucumber, chop the cilantro, slice the green onions, and chop the peanuts if using.
  6. Assemble the wraps
    Arrange the butter lettuce leaves on a serving platter. Spoon approximately 2-3 tablespoons of the shrimp mixture into the center of each lettuce leaf. Top with carrots, cucumber, cilantro, green onions, and peanuts if desired.
