  1. Prepare the duck
    Score the skin of the duck breasts in a criss-cross pattern, being careful not to cut into the meat. Pat the duck dry with paper towels.
  2. Make the marinade
    In a bowl, mix together the hoisin sauce, soy sauce, rice wine vinegar, five-spice powder, honey, garlic, and ginger. Reserve 2 tablespoons of the mixture for serving, then coat the duck breasts with the remaining marinade. Let marinate for at least 15 minutes (or refrigerate for up to 2 hours for deeper flavor).
  3. Cook the duck
    Place the duck breasts skin-side down in a cold, non-stick pan. Turn the heat to medium and cook for 8-10 minutes until the skin is crisp and golden. Turn the duck over and cook for another 4-5 minutes for medium-rare, or longer if you prefer it more well-done. Remove from the pan and let rest for 5 minutes.
  4. Prepare the vegetables
    While the duck is resting, wash and dry the lettuce leaves. Arrange the julienned carrot, cucumber, sliced spring onions, and chopped peanuts on a serving platter.
  5. Slice the duck
    Thinly slice the rested duck breast against the grain. The duck should be pink in the middle for the best flavor and texture.
  6. Assemble the wraps
    To serve, let everyone build their own wraps by placing a lettuce leaf on a plate, adding some duck slices, vegetables, and peanuts. Drizzle with the reserved hoisin mixture and garnish with coriander leaves and sliced chili if using.
