Prepare the marinadeIn a large bowl, combine soy sauce, brown sugar, sesame oil, rice wine, minced garlic, grated ginger, and half of the green onions. Mix well until the sugar is dissolved.

Marinate the beefAdd the thinly sliced beef to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

Cook the beefHeat vegetable oil in a large skillet or wok over high heat. Add the marinated beef in batches, being careful not to overcrowd the pan. Cook for 2-3 minutes per batch until the meat is caramelized and cooked through. Transfer to a plate and sprinkle with sesame seeds.

Prepare the lettuceGently separate and wash the lettuce leaves, being careful not to tear them. Spin or pat dry and arrange on a serving platter.

Set up the wrapping stationPlace the cooked beef, rice, kimchi, remaining green onions, and gochujang in separate bowls to create a DIY wrapping station. This allows everyone to build their own wraps according to preference.

Assemble the wrapsTo eat, take a lettuce leaf and add a small spoonful of rice, a few pieces of beef, kimchi, and a small amount of gochujang. Garnish with green onions and sesame seeds.

Wrap and enjoyFold the sides of the lettuce leaf over the filling and roll up from the bottom to form a small, handheld wrap. The entire wrap should be eaten in one or two bites for the best experience.
