
Shrimp Cocktail
Classic chilled shrimp with tangy cocktail sauce

Prepare the poaching liquidIn a large pot, combine water, lemon halves, and kosher salt. Bring to a boil over high heat.

Cook the shrimpAdd the shrimp to the boiling water and cook until just pink and opaque, about 2-3 minutes. Do not overcook. Immediately remove the pot from heat.

Ice bath and chillUsing a slotted spoon, transfer the cooked shrimp to a large bowl filled with ice water to stop the cooking process. Let cool for 2 minutes, then drain well. Refrigerate the shrimp for at least 2 hours until thoroughly chilled.

Make the cocktail sauceIn a medium bowl, combine ketchup, horseradish, Worcestershire sauce, lemon juice, hot sauce, and black pepper. Stir until well combined. Refrigerate until ready to serve.

Prepare serving glassesFill martini glasses or small bowls with some crushed ice. Alternatively, arrange shrimp on a platter with a small bowl of sauce in the center.

Arrange and serveHang shrimp around the edges of the glasses or arrange them on the platter. Place a small bowl or ramekin of cocktail sauce in the center. Garnish with fresh parsley sprigs and lemon wedges.
