
Shrimp Aguachile

Prepare the shrimpButterfly the shrimp by slicing them along the back without cutting all the way through. Rinse them thoroughly under cold water and pat dry with paper towels.

Make the aguachile sauceIn a blender, combine the lime juice, serrano chiles, half of the cilantro, and salt. Blend until smooth to create a vibrant green sauce.

Marinate the shrimpPlace the butterflied shrimp in a shallow dish and pour the aguachile sauce over them. Make sure all the shrimp are covered. Let marinate for 10-15 minutes, until the shrimp turn pink and opaque.

Prepare the vegetablesWhile the shrimp is marinating, thinly slice the cucumber and red onion. Soak the red onion slices in cold water for 5 minutes to reduce their sharpness, then drain.

Assemble the dishOn a large serving platter, arrange the marinated shrimp. Layer the cucumber and red onion slices over and around the shrimp. Drizzle with olive oil and sprinkle with black pepper.

Add final touchesGarnish with avocado slices and the remaining fresh cilantro. For additional heat, add thin slices of serrano chile on top.
